The Best Chicken Salad Ever

Recently I had a courtside birthday luncheon that included chicken salad and undectably gluten-free chocolate molten lava cakes, both made from scratch, and both delicious. Guess which one got more rave reviews? HINT: It was not the lava cake.



Store bought chicken salad just is not where it's at anymore. It's loaded with seed-oil mayo and preservatives. Being able to use healthy mayo with avocado oil vs. store-bought chicken salad made with canola oil mayo makes this well worth making at home.


What's all the fuss about seed oils, you ask? In a nutshell-abridged version, these seed oils (canola, soybean, sunflower, safflower, grapeseed, corn and vegetable are the most common) are highly processed, high in omega 6s, very inflammatory and, frankly, not really designed for human consumption. But they're cheap and Big Food is all about money-not health-and now I'm up here on my soapbox when all you want is the recipe.


Anywho, avocado mayonnaise is much better alternative and, having tried them all, I am here to tell you that Chosen Foods make tghe best tasting one out there. Costco carrys it for a pretty good price.





And while you're at Costco, you can get the pre pulled chicken for only $5 a pound which a steal. Now this chicken salad is not only healthy it's super easy and quick!

It's so handy to have in the frig when you're starving after playing or working out and you want a good protein and healthy fat source. You can put your own twist on it by adding walmuts, pecans, grapes, reduced-sugar craisins or red onions!


Healthy Mayo Chicken Salad


Ingredients


  • 3 cups pulled chicken breast (I use the cryovac stuff from Costco)

  • 1 cup diced organic celery (non-organic celery is on the dirty dozen list of foods highest in pesticides.)

  • 1/2 cup Chosen Avocado Oil Mayonnaise

  • 1 Tablespoon spicy brown mustard

  • 1 Tablespoon honey

  • Redmonds sea salt

  • Cracked black pepper

  • Scallions to garnish (optional)


Directions


Mix all the ingredients together, chill and serve!


Serving Suggestions


  1. Make a wrap using lettuce, Egg Life Wraps or a gluten free tortilla!


  2. Put it on a bed of arugula or bibb lettuce with cucumbers, your favorite cheese and a drizzle of balsamic glaze.
